🛒 Ingredients

👨🍳 Instructions
① Make the Dough
In a large bowl, combine:
- Flour
- Cool boiled water
- Yeast
- Egg
- Salt
🥢 Use chopsticks to stir the whole time — do NOT knead with your hands!
Stir until:
- No dry flour remains
- No lumps
That's it.
Important:
This dough has a very high hydration level, so it'll be super sticky if you try to knead it by hand.
Then let it rest and rise fully.
⭐ Make sure it rises enough — otherwise the dough won't be stretchy.
② Prepare the Filling
Mix the ground pork with:
- Sichuan pepper oil (highly recommended)
- White pepper
- Chopped scallions
- Oyster sauce
- Soy sauce
If you're worried the meat might turn out dry, add:
- A little potato starch
❗ Try not to add extra water.
③ Wrap the Pancakes
Gently stir the risen dough again to release air.
Lightly oil your hands with vegetable oil or lard.
Each piece of dough should be about:
200 g
Steps:
- Roll into a ball
- Place the filling in the center
- Seal the opening
- Gently flatten with your hands or a rolling pin
④ Pan-Fry
Brush a non-stick pan with oil.
🔥 Medium-low heat
Don't use high heat, or:
- The outside will burn
- The meat won't be cooked through
Steps:
- Fry one side until golden brown
- Brush a little oil before flipping
- Fry the other side until golden brown
Serve immediately.
